We were given a couple cans of beer and a bottle of extra stout stout. They have been sitting in the fridge for weeks. When stuff sits around like that, I end up making something out of it.

I just bought a bag of complete waffle mix (just add water). It was sitting on the counter next to the waffle iron.

Someone sent me a recipe for pizza dough made with beer. All three things clicked in my head and I wondered what beer waffles would taste like.

Well, nobody has to wonder anymore! They are delicious! And they are so easy to make. They pick up the flavor of the beer and would be fantastic for a brunch.

The key lime ale was a lighter flavor; the double beer was a little stronger, and the stout was super flavorful while also making for a darker-colored waffle.

If you like beer, you will love these waffles. The texture is amazing. I ate mine plain, but others added maple syrup and butter to theirs.

1 bag complete buttermilk pancake mix

Oil for greasing waffle iron

Ale, stout, or other beer, cold

Silicone spatula to remove waffles

Large pour spout measuring cups

Preheat waffle iron to medium-high.

Pour beer into a measuring cup and let sit for a minute to allow foam to dissipate.

Add large spoonfuls of pancake mix to the beer while stirring with a fork. When the mixture becomes a thick batter, it is done.

Brush the bottom (inside) of the waffle iron with oil and pour about a cup or so of the batter onto it. (Less is always better than too much, so it doesn't leak out.)

Brush oil quickly onto the top (inside) of the waffle iron and close the top immediately.

When ready, most irons have a light that pops on showing the waffle is done. Take a peek to see if it is browned enough. If so, gently use your spatula to loosen and remove the waffle.

Continue making more waffles as needed. Try using different beers for different waffle textures and tastes.
